Main plate
1 tsp. olive oil
4 cloves garlic
1 tbs. ginger (minced)
1 red chili pepper
2 medium tomatoes, chopped
1 15 oz. can garbanzo beans with liquid
1 tsp. soy sauce
1 tsp. Hoisin sauce
2 bunches kale (8-10 leaves)
1. Saute garlic, ginger and chili pepper in olive oil.
2. Stir in tomatoes and garbano beans with liquid. Simmer for 5 minutes.
3. Add soy sauce, hoisin sauce and kale. Cover and cook over medium heat, stirring occasionally until veggies are tender.
Makes 4 main servings, or 6 side servings.
